I love bacon, I happen to like bourbon and maple syrup is one of my favourite sweeteners… Its just sounds tasty.. So it was a no brainer for me to just try this one out … It so happens that it was a winner. The original recipe is from www.cravingsofaluntic.com
Bacon, Bourbon and Maple Jam
Makes 2 cups
Prep time 10 minutes
Cooking time 25 minutes
750g rindless bacon rashers
¼ cup olive oil
8 eshallots, peeled and finely chopped
1 medium onion, finely chopped
4 garlic cloves, finely chopped
½ cup( 125ml ) bourbon
½ cup ( 125m ) maple syrup
¼ cup balsamic vinegar
½ cup brown sugar
1 tsp paprika
1 tsp chilli powder
1 Preheat oven to 18c. Line two trays with baking paper. Line the bacon overlapping onto the trays and cook for 20-25 minutes till golden. Finely chop.
2 Heat oil in a medium saucepan over high heat. Add shallots, cook for 2-3 minutes and stir till soft. Add garlic and cook for 2 minutes.
3 Add chopped bacon, bourbon, maple syrup, vinegar, brown sugar, paprika and chilli powder. Stir to combine. Cook for 10-12 minutes till thickened and reduced slightly.
4 Pour into sterilized jars and refrigerate till needed.
I used this on my Saturday style eggs and it was sensational, eggs and bacon in one scoop !
