Cauliflower & Cheese Sauce with Spaghetti

Serves 4

 Prep 15 minutes 

 Cooking 15 minutes 

 

 

½ Head of cauliflower 

2 Tbsps butter 

2 Tbsps plain flour 

2 cups hot milk

1 1/4 cup grated cheese (I used tasty & parmesan)

1-2 tsps mustard 

Sea salt 

Cracked Black pepper

Hot spaghetti to serve

Extra grated parmesan to serve 

 

1 Cut cauliflower into pieces, place into a small saucepan and cover with water. Cook for 8-10 minutes till tender. Drain

2 Heat a small saucepan over medium heat, add butter and allow to melt, stir in flour till combined. Cook for 30 seconds. Remove pan from heat. Slowly and steadily stir in milk, return to heat, cook for 4-5 minutes till thickened and smooth.

3 Add cooked cauliflower and blitz with a hand blender, till smooth. Season with mustard, sea salt and cracked pepper. Stir in cheese till melted.

4 Serve over hot cooked spaghetti, and sprinkle with extra cheese.

 

Can be served with hot chilli flakes, Chopped chives, crispy breadcrumbs, extra herbs.
