Strawberry & Raspberry Bagel

These are my 5 best fruit based toast toppers.Upgrade your toast for your next breakfast. Try one of these for your breakfast tomorrow. How do you use up all those strawberries, blueberries,and raspberries ? Load them onto a piece of golden toast with yoghurt,mix and match with your favourite toppings and you are away!

Berries are amazing right now!  I am loving experimenting with  toasted chewy bagels, natural or sweetened yoghurt and a range of  fruit toppings. I never thought yoghurt could be eaten and enjoyed on top of toast. BUT I love it !

 

My top trick is to drizzle with something sweet and add a crunch!

Serves 2

Prep Time 10 minutes


2 x Sesame bagels

1/2 cup vanilla yoghurt

1/2 punnet chopped strawberries

1/2 punnet halved raspberries

1 x finely sliced kaffir lime leaf

1 tsp grated palm sugar

2 Tbsps shredded coconut

Drizzle of maple syrup

Pinch of ground white pepper.

Toast the bagels and spread with yoghurt. Top the bagels with strawberries and raspberries, Kaffir lime leaf, a sprinkle of palm sugar, coconut and a drizzle of maple syrup. Pinch of white pepper will really bring out the flavours of the strawberries .( I learnt this in France on my travels !)

Hazelnut Spread Toast with all the good stuff

Serves 2

Prep time 10 minutes


4 slices wholegrain bread

1/2 cup hazelnut spread

2 bananas, peeled and sliced

1 punnet blueberries

2 Tbsps sunflower seeds

2 Tbsps sesame seeds

Sprinkle of dried chilli

Toast the bread slices and spread with lashings of hazelnut spread, sliced banana, blueberries and a sprinkle of nut and seed mix. This one has some dried chilli in it and really hits the spot.

Apple and Yoghurt Honey Toast


Serves 2

Prep Time 10 minutes


4 slices of thick cut white bread

1/2 cup thick natural Greek yoghurt

2 apples, cored and thinly sliced

1 vanilla bean scraped or some vanilla bean paste/ extract

2 Tbsp raw almonds, sliced

Mint leaves

Golden syrup to drizzle


Toast thick slabs of bread white / or your favourite . Spoon on yoghurt, and fan out the apples on each slice of toast . Spread with vanilla bean, scatter with almonds, drizzle with mint leaves and golden syrup.

Mixed Seedy Toast with Raspberries

Serves 2

Prep Time- 10 minutes

4 slices sourdough

1/2 cup mixed seed spread

1/2 punnet raspberries, some crushed

Mint leaves

Honey to drizzle

Toast sourdough slices . Spread with the mixed seed spread, this can sub with peanut butter if you like. Lightly crush a few raspberries, and leave some whole. Scatter the raspberries over the toast, sprinkle with mint leaves and drizzle with honey.

Its kinda like my take on Peanut butter and jelly toast .

Serves 2

Prep time 10 minutes

4 slices wholemeal bread

1/2 cup coconut yoghurt

8 sliced strawberries

Pomegranate seeds

2 Tbsps grated raw almonds

Micro herbs to sprinkle

Generous drizzle of honey.

Toast the bread till done to your liking , spread with coconut yoghurt. Slice strawberries and arrange on top of yoghurt. Sprinkle with pomegranate, almonds, micro herbs and a good drizzle of honey .

Try these amazing fruit on toast combinations and your breakfast will never be boring again.  Gives jam on toast a run for its money!
