How good are zucchini fritters? So simple to make and only a few ingredients, although I have used grated potato in the past, this time I kept it to a minimum and just used zucchini . Love this humble veg and its versatility. This Saturday morning eggs nicole style I have added a soft boiled egg, a sprinkle of Parmesan cheese and some chilli flakes.
We loved creating this so much , that on Sunday we subbed zucchini fritter for toast and cooked the eggs “egg in a hole style” and drizzle with kecap manis and some mache lettuce. This egg style is for Nicole, a friend who convinced me to teach a few cooking classes last year… its continued on and I am enjoying the challenge of creating menus and classes that people are excited to experience.
Eggs Nicole style
Prep time 20 minutes
Cooking time 20 minutes
2 large zucchini, grated
2 Tbsp plain flour
sea salt & cracked pepper
2 Tbsp olive oil
2 Tbsp grated parmesan cheese
chilli flakes to serve
1 Combine grated zucchini, 1 egg and flour in a bowl. Season with salt and pepper. Heat olive oil in a large frypan pan over medium high heat. Divide into four and cook for about 2 minutes each side, two at a time till golden and cooked through. Set aside.
2 In the meantime place remaining eggs in a medium saucepan of water and bring to the boil. Once it has started to boil, reduce heat to medium-high and simmer for 3 minutes for soft boiled eggs. Drain and run quickly under cold water, till cool enough to peel. Peel and serve with zucchini fritter, a sprinkle of parmesan cheese and chilli flakes.
Sizzle sub- use the zucchini fritter as the “toast “and cook these eggs, “egg in a hole style”. Heat pan with olive oil and cook zucchini fritter flattened. (unless your frypan is huge you will need to do this one at a time) Flip once and make a hole for the egg. Crack an egg into the hole, cook, covered with a lid for 1 minute till cooked to your liking. Drizzle with kecap manis and top with mache lettuce and cracked black pepper.
