I love toasting some bread/ bagels/ sourdough and filling it with fresh delicious produce. The list is endless and each time its unique . French style comes for the croissant- I really only eat croissants on special occasions or the odd weekend. This is a great way to make a meal of it and enjoy the indulgence.
Eggs french style
prep time – 20 minutes
cooking time- 15 minutes
1 Tbsp olive oil
100g mixed lettuce leaves
1 large tomato, sliced
80g fresh mozzarella cheese
fresh green chillies to serve
1 Preheat grill to high. Split croissants and face cut side up on tray. Grill for 2-3minutes till lightly golden.
2 Heat oil in a large non stick frypan over medium high heat. Crack eggs into a small bowl and tip into the pan. Repeat with remaining eggs, cook for 1-2 minutes, cover and cook for 30 seconds or till cooked to your liking.
3 Build your croissant sandwhich- top with lettuce, sliced tomatoes, egg and mozzarella cheese. Sprinkle with green chillies, replace crossiant lid and serve.
sizzle sub – use sourdough, or multigrain bread as a substitute for the croissants. Add your favourite pickle or condiment.
