Laying off the complex carbs and bread lately? These eggs are for you. Vegetarian and loaded with great flavours, it’s a smooth change to mix up your Saturday breakfast. Cauliflower patties, with a beautiful fresh egg nestled inside, topped with spinach leaves, feta cheese and a sprinkle of finely grated parmesan, these will change the way you eat breakfast.
Quick and easy cauliflower and green beans formed into patties, with a lightly cooked fresh local egg, topped with fresh spinach and creamy feta cheese, these are delicious.
Quick to make and all cooked in one pan, you will be making these over and over. I love the addition of marjoram as the herb here, but you can substitute with your favourite, or basil would work nicely.

Eggs tammy style-
Prep time 10 minutes
Cooking time 12-15 minutes
400g cauliflower, cut into florets
2 cloves garlic, crushed or chopped finely
¼ cup plain flour/ or coconut flour
50g green beans, finely chopped
1 Tbsp picked marjoram , plus extra to serve
sea salt & cracked black pepper
1/4 cup olive oil
50g spinach leaves
50g feta cheese,crumbled
grated parmesan cheese to serve
1 Place cauliflower into a food processor and pulse till finely chopped. Add garlic, eggs and flour. Process in short bursts till combined. Add beans and season with salt and pepper. Pulse once or twice to combine.
2 Heat 2 tablespoons of oil in a large non stick frypan to medium high heat and add ½ cup of cauliflower mixture, flatten slightly. Cook 2 at a time, depending on the size of your frypan. Cook for 2 minutes, or till golden. Flip over and quickly make a hole in the mixture (where the egg will be cracked into.) Don’t worry if it cracks, the whites of the egg will fill the cracks.
3 Crack an egg into a small bowl, and tip it into the hole made in the patty. Repeat for other patio. Cook for 1 minute, add half spinach leaves, and feta cheese, cover and cook for 30 seconds- 1 minute or till egg is cooked to your liking.
4 Place onto serving plate, wipe pan clean and repeat with remaining mix, eggs, spinach and cheeses.
Serve eggs with cracked black pepper, extra marjoram, and a sprinkle of parmesan cheese.
sizzle tip – cook the cauliflower patties till lightly golden on the first side, then flip and make a hole big enough for the egg yolk and some white. The patties will cook through with the egg, when the lid is on.
sizzle sub- grate around 400g peeled sweet potato and use instead of the cauliflower for a change. You may have to cook it for a little longer than the cauliflower patties. If you use coconut flour this dish become gluten free !
