#1 Fresh eggs – the fresher the better!

#2 Room temperature eggs – take them out of the fridge 15 minutes before you boil them

#3 I used 70g eggs if your eggs are bigger it will take a little longer -30secs-1 min more to cook a soft boiled egg.

#4 Always use a timer!

#5 Have the heat on medium high, not “boiling”, just a gentle simmer. In a medium sized saucepan. If the water starts to boil, reduce the heat.

#6 Eggs will continue to cook until you crack them open, so I always cook them a little under, that way you can replace the lids and let them continue cooking till they are just right. Season with salt and pepper after cooking, and dig in with some bread, lightly toasted, and a small smear of real butter.

 

Give them a go for breakfast, or a light snack or dinner. Lots of recipes for eggs on the blog. Its trial and error so find out what works best for you.  The size of the egg is important, and will need to be adjusted if your eggs are larger than 70g, or less time for smaller eggs.  You may not get it perfect the first time, but keep trying, and you will have it mastered soon enough.

3 or 4 70g fresh eggs, at room temperature

sea salt & cracked black pepper

1. Bring a medium sized saucepan of water to the boil over medium high heat.  Gently add eggs in one at a time. Reduce heat as soon as it starts to boil, to a gentle simmer. Cook for 3 minutes,( use a timer as this is pretty crucial) . Spoon out gently from the hot water and into a small tea cup or egg cup. Cut the tops of and season with  sea salt and cracked black pepper. Serve with the  toast fingers.

 Sizzle tipto get eggs soft boiled, and just the way you like them, can be tricky; you may have to have a few goes at it to adjust to your stove, the heat, and how big your eggs are.  Start with just 4 eggs in a medium sized pan and just cover with water. The eggs will continue to cook after you take them out of the boiling water, so if they are not cooked enough simply pop the tops back on and leave in the egg cups to continue cooking. Soon you will get the hang of it and enjoying delicious soft boiled eggs.
