Today in my local area there is a summer party for the end of the year, a chance to unwind and celebrate all the hard work throughout the year. Mums for Mums is an organization that supports families from our local suburbs during times of illness and bereavement.
Its fabulously run by mums from the school who offer their time and skills to help others.
So these eggs are named after all the mums…. And as a mum myself I know just how hard it can be. Turn up the simplicity and try this all in one breakfast recipe- or nudge someone in the right direction….and maybe get it cooked for you.
eggs mums style
Prep time 10 minutes
Cooking time 10 minutes
4 rashers streaky bacon, chopped
1 Tbsp olive oil
2 thick slices soy linseed bread
½ cup grated tasty cheese
edible flowers to serve
1 Heat a large non stick frypan over medium high and cook bacon for 4-5 minutes till golden brown and nearly crisp. Remove from pan and drain on a plate lined with paper towel.
2 Wipe pan clean. Heat oil in same pan over medium heat . Tear a small hole in the centre of each bread slice and crumble the small middle piece into the pan around each bread slice. Cook bread slices and the crumbled pieces for 1-2 minutes till just golden. Turn bread slice over. Crack an egg into a small bowl and tip into the hole in the bread. Cook for 1 minute, cover and cook for a further minute.
3 Sprinkle bacon bits over the eggs and sprinkle each with cheese, incorporating the bread crumble as well, so its all close together. Cover and cook for a further minute or till egg is cooked to your liking, and cheese has melted. Remove from heat and set aside for 1 minute.
3 Slide onto a plate or serving board and sprinkle with sea salt, cracked pepper and some edible flowers.
Sizzle tip- keep each bread slice with egg contained in its on little area of the pan, and when you sprinkle on the bacon and cheese make sure its all connected to the bread slice. This will make it easier to lift out of the pan as one whole piece.
Sizzle sub- go to town on your favourite toppings here. Add some chopped tomato, fresh basil leaves, grated parmesan cheese, and a drizzle of sweet chilli sauce.
